At Bar Z Wines, their philosophy is to keep to a hand crafted method of winemaking using time honored methods with a little help from modern advances in the science of enology. They start out by sourcing our fruit from some of the finest vineyards in the Texas High Plains AVA.

Prior to fermentation they start with a good long cold soak of the crushed fruit. This helps to get the phenolic compounds into the juice. These compounds are the majority of the flavors in wine. When fermentation begins, it is all by hand. No pumpovers will do for a finished wine, what pushing the fermenting cap in by hand every four hours can accomplish.

After fermentation is complete, the must is not immediately pressed. Instead, they macerate the must (skins, seeds and juice) for an extended period of time for further extraction of tannins from the seeds and skins. This helps insure their wines will age and develop the complexity sometimes lacking in modern wines.When all this is done, their wines are ready for the extended aging they will receive in French oak barrels.

Their hands on approach does not stop there. Each bottle is dipped in wax and wrapped by hand so every bottle looks as good on your table as it does at the winery.
